Ingredients
  

  • 2 cups Kodiak Cakes mix Buttermilk Power Cakes variety
  • 2 eggs
  • 1 cup milk
  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat the oven to 350°F (180°C) and grease a muffin tin.
  • In a large bowl, mix the Kodiak Cakes mix and salt.
  • In another bowl, beat the eggs, milk, honey, oil, and vanilla.
  • Pour the wet ingredients over the dry ingredients and mix just enough to combine.
  • Evenly distribute the batter into the muffin tin.
  • Bake for 15-18 minutes, until a toothpick comes out clean.
  • Let cool in the tin for 5 minutes before removing.

Notes

For even more flavorful muffins, add 1/2 cup of chocolate chips or blueberries to the batter before baking. These muffins freeze well, perfect for preparing breakfasts in advance!
